Ingredients
- garlic cloves, peeled 500g
- white wine vinegar 330ml
- extra virgin olive oil 330ml
- Bacardi rum 330ml
- salt 1.5tsp
- Madras curry powder 1.5tsp
- optional sugar 1.5tsp
Method
- In a stainless steel (or other non-reactive) pan, mix all ingredients, except garlic.
- Bring to a soft simmer, until everything is dissolved.
- Add garlic.
- Continue simmering with lid, for 5 minutes.
- Place everything in sterlised jar(s). Close tightly with lid.
- Store for a minimum of 1 week before consumption.
